Healthy Diet Shakes
Apricot-Mango Smoothie
You need (for 2 servings):
-6 apricots, peeled, pitted and chopped (about 2 cups)
-2 ripe mangoes, 10 to 12 ounches each,peeled and chopped (about 2 cups)
-1 cup reduced-fat milk or plain low-fat yogurt
-4 tsps fresh lemon juice
-1/2 tsp vanilla extract
- 6-8 ice cubes
- lemon peel twists (garnish)
Method:
Place the apricots, mangoes, milk or yogurt, lemon juice and vanilla extract
in a blender. Process for 8 seconds. Add the ice cubes and process 6 to 8
seconds longer, or untill smooth.
Pour into tall glasses, garnish with lemon twists, if desired and serve direct
.
Fresh Almond Milk
You need:
-1/4 cup raw almonds
-1 cup cold water
-2 tsps pure maple syrup (optional)
Nut and seed milks were used for centuries in Europe, Asia and by the American
Indians and they are still used throughout the world as easily digestible substitudes
for cow's milk. Those made from almonds or sesame seeds are exellent sources
of easily assimilated calcium and they are delicious!
Method:
Blanch almonds by adding them to large frying pan containing 1 centimeter (1/2 inch)
boiling water, allowing them to sit in water as it boils for about 30 seconds.
The skins will loosen noticeably. Drain and pop skins off. Place blanched almonds
in blender with one cup cold water. Run blender at high speed for 2 - 3 minutes
untill a thick, white milk has formed. If you are going to drink almond milk straight,
strain it through a fine sieve. If there is a lot of pulp, you have not blended long enough.
If you are going to use the milk in a shake, there is no need to strain.
Date or strawberry shake
You need:
- 1 cup fresh almond milk
- 2 frozen bananas
- 6 pitted dates or fresh strawberries
Method:
Place almond milk and fruit in blender. Blend until thick and creamy.
If you like a thinner shake, use 1 1/2 bananas. Makes one large shake.
These shakes are nutritious and an excellent substitute for ice cream shakes or
protein drinks. Children love them.
Red Drink yogurt
You need (for one person):
- 5 strawberries
- 2 raspberries
- juice of 1/2 orange
- 1 dl yogurt
- 3 ice cubes
Method:
Place the ingredients in a blender and mix on high speed. Pour the juice into a long glass
and garnish with the kept strawberry.
Blue Milk
You need (for one person):
- 1 dl milk
- 10 blackberries
- 7 sherries without stones (keep 2 for garnish)
- dash of blackberry syrup
Method:
Place the igredients in a blender and mix on high speed. Pour the juice into a long glass
and garnish with the kept sherries.
Almond-peach yogurt
You need ( for one person):
- 1 dl yogurt
- 1 peach (keep one pice for garnish)
- 3 almonds
- dash of tropcal fruit syrup
- 3 ice cubes
Method:
Place all ingredients in a blender and mix on high speed. Pour the juice into a long glass
and garnish with the kept piece of peach.
